Strawberry Shrub Cocktail –

I am having a great time experimenting with cocktail shrubs. These shrubs aren’t the green, leafy kinds you find in your garden. These shrubs are a combination of fruit, sugar and vinegar. I had some frozen strawberries I wanted to use up before this year’s crop starts rolling in soon. I cooked my shrub, because I was hot to trot and wanted a finished product within the hour. Next time I’ll plan ahead, and do the cold/maceration way which takes several days. Here is what worked for me.

Strawberry Shrub

  • 1 cup strawberries
  • 1 cup nice quality white wine vinegar
  • 1 cup organic cane sugar

Mix these ingredients in a small saucepan, and bring to a boil on the stove.  Let simmer 20 minutes. When cool, strain the mixture through a sieve two times.

You can create a non-alcoholic beverage by mixing 1 part of your shrub creation to 5 parts of club soda. Make it as strong or as subtle as you like. For a more hardy beverage, this combo was really a crowd pleaser at our house.

Strawberry Shrub Cocktail

  • 2 ounces rum
  • 3/4 ounce strawberry shrub mixture
  • 3/4 ounce homemade grenadine (it’s super easy to make, and lasts quite a while in your fridge)
  • 4 – 6 ounces club soda
  • basil mint or regular mint or basil

Place your basil mint (it really tastes like basil, and it so much easier to grow) in the bottom of your glass. Add the rum and muddle the two ingredients together.  Add the strawberry shrub mixture, grenadine and club soda. Enjoy!

    Just found your recipe online, after seeing a Blueberry Shrub in a mag. I get. Also sounds delish! (as does yours)

    Peel: 1 lemon (no pith, use veg. peeler)

    Crush: 1 lb. fresh or frozen blueberries (thawed if frozen)
    1 1/2 c. sugar
    1 1/2 c. distilled white vinegar

    Combine: 2 2/3 c. vodka, chilled
    club soda, chilled, to fill up each glass, after adding crushed ice
    whole blueberries for garnish

    Crush the blueberries, lemon peel, & sugar in GLASS bowl; let sit 30 min. Stir in vinegar, cover, & refrig. at least 48 hrs. Press thru a fine-mesh sieve; discard solids.

    Combine shrub & vodka, stir well. Put some crushed ice in glass w/a few blueberries for garnish; pour in shrub 1/3 – 1/2 full. Finish filling glass w/chilled club soda. Serve & enjoy! (also, a lemon round on glass is very pretty)

    NOTE: If you wish to mix all at once for a party, etc., add 8 c. chilled club soda all at once to shrub in bowl; serve accordingly.

    Thanks so much for sharing this Blueberry Shrub recipe. It looks easy and delicious. When our blueberries are ripe, I look forward to trying it.
