Pineapple Umbrella Cocktail

Here’s an enticing umbrella drink for your summertime sipping. I created this cocktail to showcase my latest favorite infusion – Pineapple Weed Syrup. I discovered this wonderful pineapple weed after attending Tama Matsuoka Wong’s presentation at the Book Larder featuring her book, Foraged Flavor. Her pictures, illustrations and plant identification tips helped me feel confident that I was foraging the real pineapple weed. Its’ strong pineapple fragrance also was a major clue that I was using the right weed.

I went for creamy, pineapple, orange, and rum tropical tastes in this cocktail. Something truly worth of a paper umbrella! Here are my recipes for the Pineapple Weed Syrup and the Pineapple Umbrella Cocktail.

Pineapple Weed Syrup

  • 1/2 cup organic cane sugar
  • 1 cup water
  • 1 cup pineapple weed

Bring the sugar and water to a boil. Stir to dissolve the sugar. Turn off the heat, and add the pineapple weed. Stir again, and let the mixture completely cool. Strain the liquid, discarding the solids, into a container and refrigerate.

Pineapple Umbrella Cocktail

  • 1 1/2 ounces rum
  • 1/2 ounce Triple Sec
  • 1 ounce Pineapple Weed Syrup
  • 1/2 ounce cream
  • 1 ounce freshly squeezed orange juice

Mix and shake with ice. Strain into a cocktail glass. Garnish with freshly grated nutmeg and a bright paper umbrella.
