Cardamom & Rum Applesauce -
I am still in the thick of my canning and preserving obsession. Today I created Cardamom and Rum Applesauce. Gravensteins were on sale at my favorite grocery store. A recipe using cardamom in apple butter from Canning & Preserving with Ashley English had also caught my eye. I wanted a little more chunky texture. And I wanted to add rum. I am fairly respectful of canning recipes because of safety. So I also looked at the proportion of fruit and sugar, and amounts of added liquor in some other canning books. If you were going to make some applesauce and keep it in the fridge, you could add as much rum as you wished. So now I am excited to keep experimenting with adding spirits to my preserved foods. This applesauce is darn tasty. And I see it as a future ingredient in an autumn cocktail of some sort!
