Mama’s Little Helper

I was inspired to make my own spiced rum after reading an article in this month’s Imbibe Magazine.  It’s a great magazine, filled with info about cocktails, wine, beer and all sorts of drinkables like coffee and tea. With the clever name of Santa’s Little Helper for their DIY holiday gift, I headed straight to our spice drawer. I had an extra bottle of aged rum on hand, so I started creating. Here’s my version:

Mama’s Little Helper

Feel free to wing it and use your favorite spices like nutmeg, cinnamon, cloves, allspice, and/or star anise. If you have them in whole form, just smash them up a bit. Smashed whole spices are better than ground for this. The magazine suggested a few black peppercorns, a split vanilla bean, and a cardamom pod. I had tangerines on hand, and grated the peel of two of them. I mixed everything up in a glass jar, and let it infuse for three days.

As I was straining the spiced rum through some cheesecloth, I realized I had an instant sachet for some future spiced cider or mulled wine. Now the spices were soaked in rum! I tied the cheesecloth into a ball with some string, wrapped it in plastic, and put it in the freezer for a future treat.
