Thyme Lime Fizz Cocktail

I get a kick out of inventing and making some new ingredient for cocktails, like my recent success with the Thyme Lime Herbal Syrup. I will go through tangents, and drink the same cocktail every night until that ingredient is gone. But often times, something brighter and shinier catches my eye in the meantime. Our fridge starts to fill up with my cocktail experiments.  So I try to find more than one way to use these kinds of ingredients. My first garden cocktail using the Thyme Lime Herbal Syrup was the Thyme Lime Tipple – a martini base of gin and dry vermouth, with a splash of the syrup.

Next up is the Thyme Lime Fizz Cocktail – a wine spritzer of sorts – with some added gin for good measure. It’s still a very light, and refreshing glass of bubbly. And one more way to savor that delicious herbal syrup.

Thyme Lime Fizz Cocktail

  • 1 ounce white wine
  • 1 ounce gin
  • 3/4 ounce Thyme Lime Herbal Syrup
  • 1/4 ounce freshly squeezed lime juice
  • 4 ounces sparkling water
  • couple dashes of lime bitters
  • garnish of 5 or so cucumber slices and a sprig of fresh thyme

Thyme Lime Herbal Syrup

  • 3/4 cup water
  • 1/4 cup freshly squeezed lime juice
  • 1 cup organic cane sugar
  • grated zest of one lime (grate the zest from the lime before you squeeze it for the juice)
  • 1/2 cup fresh thyme sprigs
  • 1/4 teaspoon whole black peppercorns

Mix all the ingredients in a small sauce pan, and stir while heating over medium heat. As soon as the sugar dissolves, remove the pan from the heat. Try not to let it boil. Let the syrup cool and infuse for an hour or so. Strain into a glass jar and refrigerate.

To make the Thyme Lime Fizz Cocktail, place all of the cocktail ingredients in your tall serving glass, and mix lightly. Leave some room for some ice cubes, and enjoy.
