Goji Berries in Gin

In my ongoing efforts to add some healthier ingredients to my cocktails, I’ve been experimenting with goji berries. They are rich with antioxidants. So I infused some dried goji berries in a nice gin. Being an optimist, I’m hoping an antioxidant or two survived that less then healthy bath. The good news is the gin-infused goji berries are so darn tasty. They are wonderful additions to about any cocktail containing gin, and are a striking garnish.
I recently opened a bottle of Cocchi Americano, an Italian aperitif wine. It’s infused with a blend of herbs, fruit and spices, most notably gentian, cinchona and citrus. It is lovely on its’ own. There was a cocktail recipe on the back of the bottle, which featured gin and the Cocchi Americano – the Reviver No. 2. It’s a winning combination of flavors. Here’s the recipe.
Reviver No. 2
- 3/4 ounce Cocchi Americano
- 3/4 ounce dry gin
- 3/4 ounce triple sec (I used Cointreau instead)
- 3/4 ounce fresh lemon juice
- 2 drops absinthe
Shake the ingredients with ice, and strain into a glass. Add a generous sprinkle of gin-infused goji berries for the garnish (my addition).
Last fall, I infused goji berries in rum for the Goji Glow Cocktail – another tiptop way to enjoy these healthy berries.
