Coconut Rum Cooler

Are you celebrating the longer days, and maybe even wanting to lighten up your cocktail? This Coconut Rum Cooler is a dreamy daytime drink, filled with a healthy ingredient or two, and will remind you that warmer days are getting closer. This recipe makes two drinks, and is easy to multiply for a gathering.

Coconut Rum Cooler

Coconut Rum Cooler

  • 1 cup coconut water
  • 1/2 cup Pomegranate Rum, or your favorite rum (fruit-infused or not)
  • 1/2 cup gingerbeer
  • 1/2 ounce freshly squeezed lime juice
  • 10 – 12 drops lime bitters
  • lime wheels for garnish

Mix the above ingredients in your serving pitcher. Add some ice cubes, and lots of lime wheels.

Pomegranate Rum

  • 2 cups pomegranate arils
  • 2 cups good quality rum

Place the ingredients in a quart sized glass jar with a tight fitting lid. Store away from heat and light. Give a gentle shake daily. After two weeks, strain and pour into a clean bottle.

    This looks delicious!! Yummmm, rum and ginger beer are two of my favorites. I can’t wait to try it. I’m curious if you’ve heard of the Perfect Drink from Brookstone?
